Watermelon - Banana Smoothie

Summer is here and it couldn't be hotter! What's better than watermelon on a hot summers day? We recently had our Fourth or July barbecue and our house is overflowing with left over watermelon. So in an attempt to find a way to use some, I came up with this smoothie. :) Hope you like it.

Ingredients List:

  • 2 cups of fresh, seedless watermelon
  • 1/2 cup of lemon juice
  • 1 whole banana
  • Ice
  • Sugar
  • 1/2 cup baby leaf spinach (optional) **

Chop the watermelon into small chunks.

Place watermelon, banana & lemon juice in blender. Blend.

Add sugar to taste (I used just a sprinkle) and a handful or two of ice. Blend again.

**I was out of spinach, but as you know I sneak it into almost anything I can (smoothies included!!). If you want to add spinach simply steam some in a small pot with a little bit of water on the stove, remove when wilted. Using a slotted spoon, scoop spinach leaves into blender and re-blend. Normally I would be screaming save the spinach water, but since watermelon is so watery already, better skip it.**

Enjoy!
