Fourth of July Swirl Sugar Cookies

Happy Fourth of July!! It's hard to believe it's that time again already. of course this year I forgot my camera when we went to fireworks... :( But we had a blast and Connor LOVED the fireworks. We had our Fourth of July barbecue on the 30th and it turned out awesome. I found a really cute idea on pinterest.com for watermelon. You take a star-shaped cookie cutter and cut the watermelon into stars add some blueberries and bam! So adorable. I also found this super adorable idea for swirled sugar cookies. These would work great for any occasion really, just change the colors.

Ingredients:

  • 1 roll of refrigerated sugar cookie dough
  • 1 cup flour
  • 1/2 cup sparkling sugar
  • food coloring

Preheat the oven to 350 degrees. Divide the cookie dough into 5 equal sections. Add food coloring to each section of dough (I used blue and red and then left one plain white). Add a tablespoon or two of flour to each section of dough to keep it from getting super sticky.

Layout a piece of wax paper and sprinkle some flour on it. Roll out each piece of dough to 8x3x1/4 inch. Stack each sheet of dough on top of each other.
(we had some extra dough, so I cut stars out!!)

Cut the edges of the dough to even them out, making rectangles. Roll up the dough. Sprinkle some sparkling sugar onto the wax paper and roll the log in it until coated. Slice log into 1/2 inch pieces and press each on into more sugar.

Place on a ungreased cookie sheet and bake for 7-10 minutes (sugar side up)

These would work great for the Fourth of July, birthday, Christmas, Easter, football games...you name it!
